Job Description

Manages and maintains the daily operation of the Food Services department according to Lakeside's standards. Able to delegate appropriate functions to subordinates. Responsible for planning and executing (i.e. administrating) of all food service operations, inclusive of hands-on cooking. Responsible for hiring, training, empowering, evaluating and terminating chefs.

SCHEDULE: 

This is a full-time position working 37.5 hours per week. The schedule offers some flexibility; however, candidates must have open availability. Preference will be given to individuals who are available to work at least one weekend day (Saturday or Sunday) on a regular basis and who can provide occasional weekend coverage as operational needs arise.

Job Details

KEY DUTIES & RESPONSIBILITIES: 

1. Prepares in advance (for GM's approval) an appetizing, well balanced 5 week menu in accordance with Canada's Food Standards and Lakeside Gardens individual resident needs. Maintains on computer master plan of menu rotation and recipes for all planned menus. Maintains on a daily basis, a list of all food served, including vegetables and desserts, to repetitions are kept to a minimum. 

2. Responsible for menu costing (with assistance from Accounting) of 5 weeks menus ASAP after menus have been approved. 

3. Responsible for ensuring all HACCP procedures are routinely followed in their entirety. Responsible for developing new recipes and adding HACCP procedures. 

4. Responsible for budget controls with the department. Thorough understanding of the HEU contract. 

5. Responsible for purchasing of food and supplies for Food Service department as per established company procedures, as well as inventory level controls and appropriate storage. Is also responsible for accurately coding all invoices relating to the purchases. 

6.Responsible for the full supervision of chefs. Interviews, hires, orientates, does performance appraisals, disciplines, recommends terminations, ensures provision of appropriate staff development / in-service and monthly meetings. 

7.Meets with all new residents with 72 hours of move-in and completes a dietary assessment of each resident. Maintains and monitors changing resident dietary needs. Plans and conducts a regular Food Advisory meeting with residents to ensure satisfaction with food services.

8. Ensures dress code, job duties, cleaning schedules and food safe principles including HACCР meets department standards, ensures high quality resident service. Performs Chef duties as required. 

9. Shares responsibility, through in-service and education, in safety standard and occupational health, hygiene, infection control and pest control for the continued improvement of Lakeside. 

10. Liaises with other departments as to special requirements. Responsible for exceeding Ministry of Health standards at all times regarding cleanliness of the food preparation area and kitchen equipment - inclusive of preventative maintenance.

11. Maintains effective communication and good relations with residents, families and staff through appropriate lines of communication. 

12. Prepares monthly reports and other administrative reports as required - on a timely accurate basis. Maintain a filing system containing copies of all items including but not limited to - maintenance, temperature logs, all daily menus, cleaning schedules, etc. 

13. Responsible for maintaining food cost control (including taking accurate monthly physical inventories), menu planning and costing of same and meeting budgets

14. Responsible for suggesting cost effective methods of purchasing from various suppliers.

15.   Responsible for maintaining all Food Safe / Serve it Right / HACCP standards, etc.

16. Responsible for marketing of catering services.

17.  Responsible for ensuring all Lakeside SOP's relative to this position are followed completely

18. Provides support to other departments as required, and performs other related duties as delegated by the General Manager. 

QUALIFICATIONS:

  • Must pass a Current Criminal Record Check
  • Ability to relate comfortably to members of the Management team, as well as staff under his/her direction and residents - a team player as well as a leader.
  • Has excellent public relation skills.
  • An individual with positive self-projection, able to generate new ideas for improvement in this department - possessing good problem solving abilities.
  • Proven experience in assessment and delivery of special dietary needs.
  • This position requires strong administrative capabilities with basic computer skills using Excel and Word.
  • Well organized and able to multi-task. 

EDUCATION/EXPERIENCE:

  • A Certified Chef from an accredited school in management Food Services.
  • A minimum of two years experience in volume food preparation and or supervision in the Hospitality Industry
  • Knowledge of HACCР.
  • Food Safe Level One and Level Two.
